This is not a big long blog post kind of recipe. This is a “I tossed it together” dinner that comes together fast, tastes a little different every time, and still works. I do not measure seasonings, I just season until it smells right.
And somehow, my kids actually eat these. They honestly like them more than ground beef burgers, especially when we let them pick toppings. Cheese is always a win, and sometimes avocado too (when nobody is feeling extra picky).

Ingredients
60 oz canned black beans, drained (mash about half)
1 cup diced carrot
1 cup diced onion
1 cup diced celery
Olive oil, a drizzle
1 clove garlic, minced
Seasoning to taste (I do not measure, but I used about 1 tbsp each):garlic salt, cumin, smoked paprika, adobo chili pepper powder
3 eggs
1.5 cups Italian breadcrumbs
