Combine flour, yeast, sugar and salt to a stand mixer bowl. Attach dough hook, add water and set on low for 1-2 minutes. Set to medium for another 3-4 minutes.
Place dough in a greased bowl, cover with damp towel and allow to rest for 60 minutes. After resting, cover with plastic and refrigerate for 48 hours.
Divide dough into 6 pieces and make into balls. Poke holes into the centers and stretch until hole is about and inch and a half. Place on cookie sheet lined with floured parchment paper and allow to rest for 15 minutes.
While that is resting make Everything seasoning by combining all the ingredients. Pre-heat oven to 400 degrees and have a large pot of water come to a boil.
Place bagels into water, 3 at a time, flipping after 45 seconds. Place bagels on cookie sheet lined with greased parchment paper. Liberally season with Everything seasoning and bake for 18-20 minutes.
If you don't have Garlic Garlic or Onion Onion, you can use regular onion and garlic flakes although I recommend trying it!
