Skillet Bread

For a crusty bread in about 2.5 hours time (only about 10 minutes of actual working time), this loaf feeds about 8-10 people.

Ingredients

  • 2 1/4 teaspoons Dry Active Yeast
  • 1 Tbsp Salt Divided
  • 2 Cups Water Luke Warm
  • 4 Cups All Purpose Flour
  • 2 Tbsp Olive Oil Divided
  • 1 Tbsp Italian Seasoning

Instructions

  1. In a large bowl, combine yeast, salt and water.  Add flour, 1 cup at a time until dough forms. It will look shaggy, that is okay.  Cover with plastic wrap, allow to rest for 1 hour.

  2. Pre-heat oven to 200 Degrees F, turn off and keep the door closed.  Pull bread out of bowl with floured hands and knead dough about a dozen times until an elastic skin forms and shape into a dome.  Add 1 Tbsp. of olive oil to skillet and spread evenly.  Place dough in skillet, cover with a kitchen towel and place in warm oven for another 30 minutes.

  3. Pull bread out of oven, pre-heat oven to 400 Degrees F.  While oven is heating, spread remaining Tbsp of olive oil on dough, make an x on the top of dome and sprinkle Italian Seasoning on dough. 

  4. Bake for 35-40 minutes until dough has a golden brown crust, remove from pan and allow to cool for at least 15 minutes.  If you cut into it right away, it will squish.
